Salmon with Pineapple Salsa

If you are looking for a simple recipe to prepare any night of the week, then you need this Salmon with Pineapple Salsa in your life. The salmon is baked until tender and flaky, then topped with a sweet and spicy pineapple salsa to create an easy and delicious meal that is healthy too.

I used wild-caught sockeye salmon fillets and fresh pineapple, but you could substitute canned pineapple in a pinch and any type of salmon.

Ingredients you will need

Salmon filets, chopped pineapple, red pepper, onion, jalapeno, cilantro and a lime on a wood background.

How to make Salmon with Pineapple Jalapeno Salsa

Preheat oven to 425 degrees.

Place all salsa ingredients in a bowl and toss to combine. Set aside.

Place the salmon fillets in a baking dish and sprinkle with sea salt and pepper, then drizzle with olive oil.

Bake for 10 to 15 minutes, until salmon is opaque and cooked through. Remove from oven and allow to sit for 5 minutes before serving.

Serve salmon with a half cup of pineapple salsa.

You will have a bit of salsa leftover for late night snacking.

How to cut up a fresh pineapple

The easiest way to work with fresh pineapple is with this handy, dandy pineapple corer slicer tool.

The outer skin just slides right off, then you simply cut the slices into small chunks.

Chopped onion, pepper, pineapple, jalapeno, cilantro and lime zest in a glass bowl.

Try to keep your bell pepper and onion diced just a bit smaller than your pineapple.

Recipe Notes & Tips

  • All ovens cook differently. Start with the lower time and work your way up if needed.
  • Feel free to substitute Southwest Seasoning for the salt and pepper for even more flavor.
  • Use any type of baking pan that you have on hand
  • For spicier salsa substitute serano or habanero pepper.

Pineapple Salsa

  • 2 cups fresh pineapple, diced
  • .5 cup diced red bell pepper
  • .5 cup diced sweet yellow onion
  • .5 cup chopped cilantro
  • 1 lime zest and juice
  • 1 teaspoon diced jalapeno or more to your tastes

Baked Salmon

  • 24 ounces wild-caught salmon 4 – 6 ounce fillets
  • .5 teaspoon sea salt
  • .25 teaspoon black pepper
  • 2 Tablespoons olive oil

Instructions

  • Preheat oven to 425 degrees.
  • Place all salsa ingredients in a bowl and toss to combine. Set aside.
