Frozen Mango Margarita

You didn’t think that I would let Cinco de Mayo slip by without a cocktail did you? I love mangoes so I really excited to try them in a Margarita. In fact, I think that I might actually like this Frozen Mango Margarita even better than last year’s Watermelon Margarita!! It was even easier to make as well, because I used frozen mango chunks! Thick, not too sweet, and oh so perfect…Yum!

I tried to called it a fruit smoothie on instagram, but I pretty much got called out on that one, LOL.

Since this Mango Margarita is made in a blender, with mango {a fruit} and lime juice…so you can see my thinking right? 😉   Maybe we should just move on….. 😉

As you can see, I am quite particular about my measurements… NOT…..

How to make a Frozen Mango Margarita:

Add the mango chunks, tequila, Cointreau, lime juice, sugar, and ice cubes to the blender…..

I used superfine baker’s sugar to make sure that it would dissolve, and it worked really well. Start on the lowest setting, mine is STIR and slowly work your way up to PUREE/LIQUIFY so the drink is completely smooth. You may need to stop and stir the mixture with a spoon if the ice gets stuck in the blades. If the mixture is too thick to blend, let it sit on the counter for a few minutes.

Rub lime juice around the edges of the margarita glasses and dip the edges in sugar…..

Pour the Mango Margaritas into the prepared glasses and garnish with a lime slice if desired and serve…..

If you do not need both margaritas you can:

A) divide the ingredients in half or

B) you can place the leftover mixture in a zipper top bag and place in the freezer to enjoy another day!

The alcohol will not freeze, so it will not be frozen solid when you remove it from the freezer. Set on the counter for a few minutes and it will be ready to pour into a glass in no time!

Ingredients

  • 2 ½ cups frozen mango chunks
  • ½ cup silver tequila I used Cabo Wabo
  • 2 Tablespoons superfine sugar
  • 2 Tablespoons fresh lime juice
  • 1 Tablespoon Cointreau or triple sec
  • 2 cups ice cubes

Instructions

  • Place all ingredients into a blender.
  • Stop with the lowest setting, and continue until smooth and completely combined.
  • Rub lime juice along the edge of the margarita glass and dip into sugar to garnish, if desired.

    1. Our weather is completely opposite. We have had below average temperatures for 7 months, and CA has had above normal temperatures. I wish there was a happy medium…and more margaritas! 😉
