Bacon Cheeseburger Pizza

Bacon Cheeseburger Pizza combines two family favorites into one recipe. Thin crust pizza topped with melted cheddar cheese, barbecue sauce, ground beef, thick-cut bacon, red onion, diced tomatoes, and melty mozzarella cheese is a fun addition to pizza night!

Recipe Inspiration
I was craving a bacon cheeseburger…..you know, my favorite food group. So I was digging through a stack recipes that had piled up on the counter looking for my hamburger buns recipe. I pulled out the dough machine, poured in the ingredients, put it in the machine, and realized that there were no eggs…..wait, what did I just make? Pizza Dough…..crap…now what?
Okay, I’m going to go take a shower. Is it just me or is the shower a great place to think? Maybe it is the steam from the hot water, or the rumble of the exhaust vent…..DUH…..I will make Bacon Cheeseburger….. PIZZA!!! I already had all of the ingredients, I just needed to adjust how they were put together! Best mistake ever!!

- Homemade Pizza dough OR Italian Pizza dough are the best and freshest options. You can also purchase dough from your local pizza parlor and the grocery store.
- Shredded cheddar cheese around the edge of the pizza dough gives this recipe an extra special twist of flavor and makes it taste more like a cheeseburger.
- Barbecue Sauce is my favorite burger topping so it was an obvious choice for this pizza. Bourbon and Brown Sugar is my favorite, but any flavor will work. Feel free to substitute pizza sauce if you prefer…but you really should try the barbecue sauce.
- Pre-cooked ground beef and thick-cut bacon pieces can be made ahead of time and placed on top right before cooking.
- Thinly sliced red onion and diced Roma tomato add to the authenticity of a “cheeseburger pizza”, and mozzarella cheese holds it all together.

How to make Bacon Cheeseburger Pizza
Place baking stone in the center of the oven, and preheat oven to 500 degrees F one hour before baking.
Cut bacon into 1-inch pieces and cook in a large skillet. Drain on paper towels and set aside.
Wipe out the bacon grease and brown the ground beef in the same skillet leaving large pieces when breaking it apart. Drain off excess fat and set aside.
Place pizza dough on a sheet of parchment paper and press into an 11 to 12-inch circle. Sprinkle shredded cheddar cheese around the edge.
Alternate method – cover a pizza peel or flat baking sheet with cornmeal, to prevent the dough circle from sticking.
Spread barbecue sauce around the center of the circle. Do not worry if some of the shredded cheese gets caught in the sauce.
Sprinkle ground beef and bacon pieces over sauce.
Spread the onion slices and diced tomatoes evenly over the top of the meat.
Sprinkle the mozzarella (and any remaining cheddar) over the top of the pizza.
Carefully slide a pizza peel under the parchment paper, then slide onto the preheated baking stone. Bake for 10 minutes, or until cheese is bubbling and starting to brown.
Allow pizza to cool for a few minutes and drizzle with additional barbecue sauce. Cut into 8 slices and serve.
recipe adjustments
- This recipe originally had six, baked onion rings instead of the red onion. If using, cook according to the package directions and add to the baked pizza right before serving.
- As you can see in the image below, the diced tomato was added along with 0.5-cup of shredded lettuce to the finished pizza.
It may have started out a mistake, but it turned into a very happy surprise!
Recipe Notes & Tips
- Cook the bacon only until cooked through, and not extra-crispy. The bacon will continue cooking in the oven.
- I poured a small amount of barbecue sauce into a zipper-topped bag then snipped off the end to drizzle sauce over the finished pizza.
- It is best to work with room temperature pizza dough. If dough shrinks, it is too cold. Allow to rest for five to ten minutes and try again.

- Pizza Cutter – do not cut on the pizza peel, it will ruin the wood and your pizza will stick to the grooves!

Onion rings on a pizza? Gurl, you crazy…I love it!!! I must confess, I make pizzas all the time…I have never successfully pulled off a pizza peel transfer. Never. It’s like my oven is a black hole, sucking the laws of physics into its vortex. It’s okay, I’ve come to terms with it.
