This amazing Shrimp Pesto Pizza is topped with kale pesto, sun-dried tomatoes, feta and mozzarella cheese on a light and chewy homemade crust.

What you will need

  • One pound of pizza dough – homemade is best but store-bought will also work.
  • Pesto sauce – I used homemade kale pesto but basil is also delicious.
  • Raw shrimp that has been peeled and deveined. 16-count is a good size for pizza, but any size will work.
  • Shredded mozzarella cheese – the solid kind in the cheese section, not the fresh kind sold in water.
  • Crumbled feta cheese gives this pizza a nice tangy flavor.
  • Jarred sun-dried tomatoes packed in olive oil that have been sliced into bite-size pieces.
  • A sprinkling of Parmesan cheese to add another layer of flavor.

So, did I mention how incredibly amazing this pizza is? I will continue to tell you how delicious it is throughout this entire post, it is that good!

How to make Shrimp Pesto Pizza

If you are using a baking stone {which you should} place it into a cold oven and preheat to 500 degrees for one hour.

In a large bowl, toss shrimp with 2 tablespoons of pesto. Set aside.

On a well floured surface, roll out pizza dough into a 12-inch circle. Place dough circle on a parchment paper lined pizza peel or backside of a baking sheet.

Spread .25 cup of pesto sauce over the top of the pizza dough. Place the shrimp on top of the pesto in a single layer.

These were giant shrimp! Sprinkle on the mozzarella and goat cheeses, and finally the tomato slices.

Add more or less cheese based on your tastes. The amounts are more like guidelines. 😉

Slide pizza onto the hot baking stone and bake for 10 to 14 minutes, depending on your oven. Remove from oven, slice and garnish with grated Parmesan cheese.

If I had made this Shrimp Pesto Pizza in the shape of a heart, it would have been perfect for Valentine’s Day!! Serve with a chilled Savignon Blanc or Pinto Grigio and you are set! 🙂

Recipe Notes & Tips

  • If using jumbo shrimp it helps to cut them in half to make them easier to bite into.

Ingredients

Notes

  • My Homemade Pizza Dough recipe will make 2 pounds of dough, enough for 2 pizzas. To make two Shrimp Pesto Pizzas, double the ingredients, or make a second type of pizza.
  • You can also store the remaining dough in a plastic container in the refrigerator for up to 3 days.
  • If using jumbo shrimp it helps to cut them in half to make them easier to bite into.
