Watermelon Moscow Mule

Summer is almost here, and nothing screams summer like watermelon! Visions of picnics and barbecues with table lined with delicious food and drinks. Well I am in the mood for a cocktail in this little fantasy of mine, and this Watermelon Moscow Mule is the perfect light and refreshing cocktail to enjoy on those hot summer nights.

Watermelon juice – check! Lime juice – check! Citrus vodka – check! Top it off with bubbly ginger beer and this Watermelon Moscow Mule might just make you forget that it is 120 degrees outside…might! 😉 Okay probably not, but at least they are easy to make and watermelons are readily available everywhere.

How to make a Watermelon Moscow Mule

Place the watermelon chunks into the pitcher of a blender. Cover and puree until smooth.

I knew that I was making more than one cocktail, so I cut 2 big slices of watermelon into chunks. 😉

Strain the watermelon, reserving the juice. Discard the pulp.

Place .25 cup of watermelon juice, vodka, and lime juice into an ice filled cocktail shaker. Cover and shake to thoroughly combine.

Strain cocktail into an ice filled copper mug. Top with ginger beer, and garnish with watermelon wedge and mint sprigs.

Yum!! Just be careful, they go down r-e-a-l-y easy. 🙂 Always drink responsibly, and Don’t Drink and Drive!!

Recipe Notes & Tips

  • As I noted above, I just threw a bunch of watermelon chunks into the blender and made enough juice to make about 5 cocktails. I stored the leftover juice in a glass jar in the refrigerator just in case I needed to make another one.
  • I squeezed the lime wedge into the cocktail shaker, and then tossed the lime in. A little extra flavor is always a good thing, right?

Ingredients

Instructions
