What you’ll need
I wanted to keep this crispy air fryer zucchini recipe light, and as low-carb as possible so we will not be coating them in flour. The coating will still stick to the zucchini, and we get to skip an extra step!
- One pound of medium-size zucchini
- Panko breadcrumbs – regular or gluten-free
- Freshly grated parmesan cheese
- Italian seasoning
- Garlic powder
- Kosher salt and black pepper
- Two large eggs
- Olive oil spray to crisp up the breadcrumbs

How to make crispy zucchini fries in an air fryer
Cut each zucchini into sticks about 3 to 4-inches long.
Mix the panko crumbs, Italian seasoning, garlic powder, salt, pepper, and parmesan together in a small bowl. Whisk eggs together in a separate bowl.
Dip each zucchini stick into the egg mixture, then into the breadcrumb mixture. Place on parchment paper as you go until all of the zucchini is coated.
Lightly spray the air fryer basket with oil and place the zucchini fries into the basket in a single layer.
Spray zucchini lightly with olive oil and air fry at 400° F. for 6 to 8 minutes, or until golden brown and crispy. Repeat the process with the remaining zucchini.
Serve warm with ranch dressing, marinara, or garlic aioli on the side.

- Allow the zucchini fries to cool completely at room temperature before storing them. This helps prevent condensation and sogginess.
- Place the cooled zucchini fries into an airtight container, trying not to stack them on top of each other too much.
- If you need to stack the fries, place a layer of parchment paper or wax paper between the layers to prevent sticking.
- Store in the refrigerator for 3 to 4 days.
- To reheat the zucchini fries, preheat your oven or air fryer to around 375°F (190°C) and heat the fries for a few minutes until they’re warm and crispy again.
