If you are looking for recipe that is guaranteed to impress, then you absolutely must make this homemade Lobster Pizza! The crispy crust is topped with an easy lemon-garlic sauce, three cheeses, lobster meat and fresh tarragon.

I wish I could describe how amazingly delicious this pizza is!! The crust is light and fluffy, the garlic and tarragon blend perfectly with the fresh lobster meat. Then there is the combination of melted cheese that ties the whole thing together. I didn’t think anything could top my Shrimp Scampi Pizza, but this pizza does!

What you need to make this Lobster Pizza recipe
- We start with homemade pizza dough that sits on the counter to warm up while making the sauce which includes; butter, minced garlic, diced onion, white wine and lemon juice.
- Once the sauce is reduced, toss the lobster meat into the skillet just to coat it with the sauce, then assemble the the pizza with grated mozzarella, fontina and parmesan cheeses.
- Once the pizza is baked golden brown it is topped with fresh tarragon leaves and and additional grated Parmesan.

How do you make homemade Lobster Pizza?
Place a pizza stone on the lowest oven rack and heat the oven to 500 degrees for one hour. Allow the pizza dough to rest covered on the counter while the oven is heating.
Melt one tablespoon of butter in a skillet over medium heat. Add the onion and cook until softened. Add the garlic and cook for one additional minute.
Pour in the wine and lemon juice.
Reduce heat to medium-low and simmer to reduce by half.
Add the remaining butter and stir to throoughly combine.
Add the chopped lobster to the skillet and toss to coat.
Remove from stove and set aside.
Pat and stretch the pizza dough to form a circle. Place on a cornmeal dusted pizza peel.
Tilt the skillet while holding the lobster meat in place at the top. Brush the lemon-garlic sauce over the top of the pizza dough with a pastry brush.
Sprinkle with a little more than half of the grated cheese.
Spread the lobster meat evenly over the top of the cheese, then sprinkle with remaining cheese.
Slide the pizza onto the preheated pizza peel and bake until golden brown and the cheese is melted and bubbly, about 8 to 12 minutes.
Sprinkle the tarragon leaves over the top of the pizza and serve.
I sprinkled some additional Parmesan cheese along with crushed red pepper flakes over the top of this slice of pizza. Have I mentioned how insanely delicious this pizza is?
Recipe Notes & Tips
- Feel free to use store-bought dough if you prefer.
- My pizza baked for 10 minutes, but each oven is different so your cooking time may vary.
- Substitute seafood stock for the wine if needed.
- Substitute sliced basil or parsley for the tarragon if desired.
- This pizza would be just as delicious with shrimp or a combination of seafood.

Ingredients
- 5 tablespoons unsalted butter cut into cubes, divided
- .25 cup diced yellow onion
- 2 cloves garlic minced
- 2 tablespoons lemon juice
- 2 tablespoons white wine
- 8 ounces cooked lobster tail cut into .5-inch pieces
- 1 pound pizza dough
- .75 cup shredded mozzarella cheese
- .25 cup shredded fontina cheese
- .25 cup grated Parmesan cheese
- 2 tablespoons fresh tarragon leaves torn
Instructions

- Tilt the skillet while holding the lobster meat in place at the top. Brush the lemon-garlic sauce over the top of the pizza dough with a pastry brush.
