Prickly Pear Margaritas

These vibrant pink Prickly Pear Margaritas are the ultimate, refreshing summer drink! They are made with simple margarita ingredients; tequila blanco, orange liqueur, lime juice, and agave nectar with the addition of fresh prickly pear syrup.
My son and his wife have found an awesome restaurant in Gilbert, Arizona. Arizona Wilderness Brewing Co. is actually a brewery, but they also serve food and the most amazing Prickly Pear Margaritas!! By the way, the bacon cheeseburger is perfection and the duck fat fries are A-M-A-Z-I-N-G!!
I have been waiting patiently for my prickly pears to ripen so I could make my own at home, and they were worth the wait.

What you will need
I wrote down all of the ingredients listed and the menu. Unfortunately light agave syrup is sold out everywhere, so I had to make my Prickly Pear Simple Syrup with sugar instead. Still delicious and super easy to make.
- Tequila Blanco – you want a high-quality tequila like Casamigos, Patrón, Don Fulano, and Cabo Wabo. You really can taste the difference.
- Orange Liqueur – Cointreau or Gran Marnier are much better options than triple sec, which has a much weaker flavor that is not nearly as smooth.
- Lime Juice – from fresh limes not the chemical tasting version sold in the little green plastic limes in the refrigerator section.
- Prickly Pear Syrup – fresh, homemade syrup will have the freshest flavor but store-bought works when prickly pears are out of season.
- Black Hawaiian Sea Salt – black salt creates a striking contrast again the bright pink. I used a combination of black and kosher salt, but plain kosher salt works just as well.

How to make prickly pear margaritas
Prepare rocks glasses by rubbing a lime wedge around the edge of each glass. Dip into black sea salt on a small plate and fill with ice.
Alternate method: use a paint brush dipped in simple syrup to create a large “V” on one side of the glass. Hold the glass over a plate and sprinkle the black sea salt over the syrup. Set aside to dry then fill with ice.
Add tequila, orange liqueur, lime juice and prickly pear syrup to an ice filled cocktail shaker.
Shake vigorously for 30 seconds to combine.
Strain into prepared glasses and garnish with a lime slice or wedges. Serve immediately.
The gorgeous color makes these margaritas perfect for Cinco de Mayo, Mother’s Day, 4th of July, or even Valentine’s Day!
Recipe Notes & Tips
- For frozen margaritas – pour ingredients and ice into a blender instead of the cocktail shaker and puree until smooth.
