What you will need
- Frozen Watermelon – cut fresh watermelon into 1-inch chunks and place in a zipper top freezer bag. Squeeze out the air and place in the freezer overnight.
- Pineapple Juice – Chill canned or fresh pineapple juice overnight.
- White Rum – I used Bacardi Superior, it is the official rum for pina coladas, but any good quality white rum will work.
- Coconut Milk – Unlike traditional pina coladas, this version uses canned, full-fat coconut milk that you can find in the International section of your grocery store. The traditional Coco Lopez cream de coconut is sweetened, but this drink does not need any additional sugar. The watermelon and pineapple juice add just the right amount flavor and sweetness.
- Garnish – cut pineapple wedges and the pineapple leaves, a large watermelon wedge or slices cut into shapes with small cookie cutters like the stars above are all good options.

FAQ’s
For the best flavor and texture, yes you do. Ice would need to be added to the drink in order to make it frozen, which waters down your cocktail. By freezing the watermelon, which is mostly water, your drink stays nice and icy cold.
Cream of coconut (Coco Lopez) is a thick, heavily sweetened, processed coconut milk product that resembles condensed milk. Personally, I find this drink sweet enough just the way it is. Feel free to substitute cream of coconut for the unsweetened coconut milk if you prefer a sweeter cocktail, or you could add simple syrup to the coconut milk.
Yes, you can make the recipe ahead of time and place in freezer-safe containers or zipper top freezer bags and place in the freezer until needed. This is also a great way to save leftover cocktails. Just pull them out a few minutes before needed and place them on the counter to soften, then pour into your glasses.
