These swirled cream cheese Galactic Brownies from scratch are the perfect dessert for both brownie and cheesecake lovers. Rich, fudgy brownies with thick swirls of blue colored cream cheese filling topped with white chocolate chips “stars” make these brownies out of this world decadent!

Yes, I do realize that Galactic Brownies are not Czech….but after the Milky Way Martinis, I just couldn’t resist! Our Aquarius friends are friendly, free-thinkers that desire their freedom. Oprah Winfrey, Jennifer Anniston, Jack Nicholas, Justin Timberlake, and Alecia Keys just to name a few.

I love the way these brownies turned out, and the way they taste!! I wanted a spacey kind of look, so I swirled in a cream cheese filling that I colored with gel food coloring. Then dotted the top with white chocolate morsel “stars”. I wish Alex had left behind a C3P0 or Darth Vader toy when he moved out so I could have used them for the pictures!

How to make Galactic cream cheese Brownies from scratch

Preheat oven to 350 degrees. Cover a 9-inch square baking pan with parchment paper leaving the ends long to use as a handle. Spray with baking spray, set aside.

To make the brownies

Melt the butter and chocolate in the microwave, in a heatproof bowl.

Stir until smooth.

Whisk in the sugar.

then whisk in the eggs and vanilla.

now stir in the flour.

Stir 0.5-cup of white chocolate chips into the batter and pour into a prepared baking pan.

Reserve the remaining chocolate chips for later.

To make the cream cheese filling

Beat the cream cheese, egg, and sugar together until smooth with a hand mixer.

The cream cheese needs to be room temperature, or you will never get it smooth!

Mix in the blue gel coloring just until combined. The white streaks help to make it look like the Milky Way in outer space.

I add a small amount and then add more if the color is not right. Start small, you can always add more!

Scoop the filling with a large spoon and drop it onto the brownie batter.

Use a knife to swirl the cream cheese into the brownie batter in a random pattern.

Bake for 30 – 35 minutes or until a toothpick comes out clean when stuck into the center of the brownies.

Remove brownies from pan and place on a cooling rack. Stick reserved chocolate morsels into the top of the brownies to mimic stars. Allow to cool completely before serving.

I just stuck them in randomly all over the top to look like stars and they are also studded throughout the center of the brownies!

Allow brownies to cool completely, then place in the refrigerator to chill for at least 4 hours before cutting.

Cut chilled brownies with a thin, sharp knife. Make clean, smooth cuts and wipe off the knife with a clean towel in between each cut.

Recipe Notes & Tips

  • Feel free to add a full cup of chocolate chips if you would like more “stars” in your brownies
  • This recipe can be easily double and baked in a 9 x 13-inch pan for the same amount of time. However, cooking times are approximate given the fact that all ovens bake differently. Keep an eye on them.
  • Store leftover brownies covered with plastic wrap in the refrigerator for up to 3 days.

Ingredients

Brownies

  • 4 ounces unsweetened chocolate I used Bakers
  • .75 cups unsalted butter
  • 2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup unbleached all-purpose flour
  • .75 cup white chocolate morsels .25-cup reserved

Cream Cheese Filling

  • 8 ounces cream cheese at room temperature – I used dairy-free
  • 1 large egg
  • .33 cup granulated sugar
  • dark blue gel coloring I used saphire blue

Instructions

  • Preheat oven to 350 degrees. Cover a 9-inch square baking pan with parchment paper leaving the ends long to use as a handle. Spray with baking spray, set aside.

Brownies:

  • Place chocolate and butter in a large microwavable bowl. Heat on HIGH for 2 minutes. Stir until smooth.
  • Stir in the sugar. Whisk in the eggs and vanilla.
  • Stir in the flour, just until combined. Stir 0.5-cup of white chocolate chips into the batter and pour into a prepared baking pan. Reserve the remaining chocolate chips for later.

Cream Cheese Filling:

  • Beat cream cheese, egg, and sugar together until smooth with a hand mixer. Mix in the blue gel coloring just until combined. 
  • Drop filling on top of brownie batter using a large spoon.
  • Use a knife to swirl the cream cheese into the brownie batter in a random pattern.
  • Bake for 30 – 35 minutes or until a toothpick comes out clean when stuck into the center of the brownies.
  • Remove brownies from pan and place on a cooling rack. Stick reserved chocolate morsels randomly across the top of the brownies to mimic stars. Allow to cool completely before serving.
