Apple Coleslaw

This sweet, tangy, and crunchy Apple Coleslaw is the perfect addition to barbecue chicken or pork sandwiches and even pizza! It has a slight Asian fusion vibe to it that gives it it’s sweet and tangy flavor, but subtle enough to not be overpowering.

Place cabbage, carrots, green onions, and cilantro in a large bowl. Set aside…..

In a separate bowl, whisk together mayonnaise, vinegar, lemon juice, honey, soy sauce, sesame seeds and pepper. Set aside.

Now slice your apples thinly {I peeled mine first}…..

and add them to the cabbage mixture. { I did them last to prevent them from browning} Pour the sauce over the cabbage mixture and toss to combine…..

Cover and refrigerate until ready to use. The flavors will develop over time, so chill for at least a few hours.

Notes:

  • I cut my carrots into matchsticks this time, but I think I prefer them shredded. 😉
  • I cheated and used a bag of coleslaw mix. I was having trouble finding Asian cabbage, and I wanted the mix of colors
  • I chose Granny Smith apples because I knew that my barbecue sauce would be sweet. If using a tangy or spicy barbecue sauce, you might prefer to use sweeter apples, like Fiji or Gala.

I am not a fan of traditional coleslaw, but I love this version!

Ingredients

  • 1 bag shredded coleslaw mix or 1 head of cabbage sliced thinly
  • 2 carrots shredded or cut into matchsticks
  • 5 green onions thinly sliced
  • ¼ cup chopped Cilantro
  • 1 cup mayonnaise
  • 2 Tablespoons soy sauce
  • 1 lemon the juice of one lemon
  • 2 Tablespoons apple cider vinegar
  • cup honey
  • 1 teaspoon ground black pepper
  • 1 Tablespoon sesame seeds
  • 2 large apples thinly sliced (Granny Smith for tart, Fiji for sweet)

Instructions

  • Place cabbage, carrots, green onions, and cilantro in a large bowl. Set aside.
  • In a separate bowl, whisk together mayonnaise, vinegar, lemon juice, honey, soy sauce, sesame seeds and pepper. Set aside.
  • Peel and slice apples and toss with cabbage mixture.
  • Pour the sauce over the cabbage mixture and toss to combine.
  • Cover and refrigerate until ready to use.
