Happy New Year!! Were you expecting a healthy recipe to start the year? I decided to shake things up this year and NOT post yet another resolution to eat more veggies….blah blah blah. When I wrote my New’s Year’s Eve Party Foods post, I mentioned that I would probably be at home creating a new champagne cocktail (Chambord® Royale) and taking new photos for my Crab Rangoons post…..
Well that is exactly what I did, and this is the Chambord® Royale cocktail that I created…..
I had a Kir Royale in my head when I headed off to the grocery store, and then I forgot what was in it. I saw the bottle of Chambord® on the shelf and decided that it would be perfect for my cocktail.
By the way, a Kir Royale is Cream de Cassis and Champagne. I am not a huge fan of Champagne, so I actually used an Italian Prosecco in mine. 🙂
I prefer the sweeter taste of Prosecco, but it’s up to you.
The color of this cocktail is actually much prettier in person, than in the images that I was able to capture. It is a brighter pink, and would make an excellent cocktail choice for Valentine’s Day as well…..
Chambord® is a Black Raspberry Liqueur from France, and yes, it is expensive. It is well worth it for the smooth, well balanced fruity flavor that makes this cocktail extra special. {infusion of raspberries, blackberries, black raspberries, black currant, Madagascar vanilla and cognac}
I couldn’t find any black raspberries at the grocery store, so I went with blackberries….but you could also use raspberries. 🙂
How to make a Chambord® Royale:
Start by adding a 1/2 ounce of Chambord® to each champagne flute…..
Drop in your blackberry/raspberry…..
and top off with Champagne/Prosecco…..
and serve!
There is a Chambord® Champagne cocktail in the tiny recipe book hanging on the bottle, but I found that a 1/4 ounce of Chambord® didn’t add enough flavor. I want to actually taste the raspberry flavor, so I bumped it up to 1/2 an ounce…approximately. Mine may have been a little bit closer to 3/4 ounce, so play with it and find the perfect balance for your tastes. 🙂

Instructions
- Pour Chambord® into a champagne flute.
