Limoncello Tiramisu Ice Cream

A—M—A—Z—I—N—G— this is best Ice Cream that I have EVER eaten! Over the top? I don’t think so. This Limoncello Tiramisu Ice Cream is so rich and creamy, you would never in a million years guess that it is dairy-free and vegan! It is the perfect dessert for our Cooking with Astrology “Taurus” meal…..

So why is this Ice Cream so different and amazing you ask? I do believe that the Tofutti non-dairy cream cheese is the answer. If you can eat dairy, I’m sure that Mascarpone would be just as luscious and fantastic!! The fact that alcohol does not freeze, is an added bonus as well. The image above was taken 1 hour after I placed it in the freezer. It was very soft, and the Lady Fingers* were till crunchy. That made me a bit nervous!

It is firm and set, but not rock hard. That is perfect Ice Cream in my book! Oh and the Lady Fingers, had softened over night…..perfection!

How to make Limoncello Tiramisu Ice Cream:

In a large bowl, beat the cream cheese to get it smooth and creamy…..

then add the coconut milk, limoncello, sugar, and salt…..

Continue beating until well incorporated and smooth…..

Pour into the canister of your ice cream machine…..

and process according to the manufacture’s instructions, mine is 20 minutes. Set your timer and pull out your Lady Fingers*…..

I found them in the cookie aisle at the grocery store. Okay to be honest, it took three of us three tries to finally find them on the bottom shelf next to the Nilla Wafers. 😉   Break the Lady Fingers into 4 pieces and set aside…..

When the Ice Cream is almost finished, pour some Limoncello into a small bowl and quickly dip the Lady Finger pieces into it…..

We just want to give them some flavor, but not soak them….they will be way too strong if you soak them! Scoop your Ice Cream into a plastic container…..

Toss in the Lady Finger pieces, and stir to mix them in…..

Cover with a lid, and place in the freezer until ready to serve…..

Wouldn't you love a bowl of Limoncello Tiramisu Ice Cream for dessert tonight

Whether that is 1 hour for soft serve, or overnight for traditional Ice Cream, you will not be disappointed.

Notes:

  • * Substitute vegan vanilla wafers or cookie of your choice if you cannot find vegan lady fingers.
  • To make regular ice cream: substitute mascarpone or regular cream cheese and half and half for the coconut milk
  • To make without alcohol: substitute boxed coconut or cashew milk with 1 teaspoon of organic lemon extract. Add additional extract if not strong enough. I would also skip dipping the Lady Fingers pieces.

I will go ahead and skip over the health benefits of this Ice Cream. Other than the pure joy of eating it, there are none that I can justify. 🙂  I initially chose to make a Limoncello dessert for this meal because I chose George Clooney to make the meal for. He loves Italy, and that is where Limonello comes from. Tiramisu is always served in Italian restaurants, so I knew I needed some version of Limoncello Tiramisu for dessert!

The sun sign Taurus runs from April 21 st to May 21, depending on which book or site you look at. Yahoo Astrology and several of my astrology books, claim that Taurus is April 20th to May 20th. George’s birthday is May 6th, so we know for sure that he is Taurus!!

So is Cher, my son Alex, Renee Zelwegger, Jay Leno, Stephen Colbert, and Jeffrey Dean Morgan…who I almost chose for this meal…and me!

Ingredients

  • 16 ounces dairy-free cream cheese at room temperature
  • 1 cup full fat coconut milk can
  • 0.67 cups super-fine baker's sugar two-thirds cup
  • 0.13 teaspoon sea salt one-eighth teaspoon
  • .25 cup Limoncello I use Caravella
  • 6 Lady Fingers* broken into 4 pieces
  • Additional Limoncello for dipping

Instructions

  • In a large bowl, beat together cream cheese, coconut milk, sugar, salt, and limoncello until smooth and creamy.
  • Pour mixture into a frozen ice cream canister and process according to manufacture's instructions, about 20 minutes.
  • When there is one minute left, pour one-eighth cup or so of limoncello into a small bowl. Quickly dip each lady finger into limoncello and set aside.
  • Scrape ice cream out of canister and place in a large plastic container.
  • Stir in the lady fingers, making sure they don't clump together. You want them evenly distributed. Cover with a lid, and place in the freezer.
  • One to four hours in the freezer will give you a "soft-serve" type of ice cream. Overnight, and your ice cream will be firm, but not rock hard. Alcohol does not freeze, so your ice cream will remain softer than regular ice cream.
  • Scoop and serve.
