The plastic cover? Yes, that comes off. It is common for it to take at least 15 minutes to release the steam depending on what you cook.

If you have a large family you might want the 8 qt, otherwise the 6 qt seems to be large enough for everything that I have made so far. I think it comes down to personal preference and what your needs are Connie. 🙂
