Greek Orange and Olive Salad

This month for Cooking with Astrology, it is all about “Leo” the lion. King of the jungle comes to mind. Leos are ambitious, confident, big hearted, creative, and love being the center of attention! A few examples are; Madonna, President Obama, President Clinton, Sean Penn, and the gorgeous John Stamos…who is the inspiration for tonight’s meal…..

It is much easier to plan a meal, if you have some kind of inspiration. When I was researching Leos, as soon as I saw heart healthy, fire, and lamb…I knew it had to be lamb kabobs. Lamb kabobs to me are Greek, so the rest of the meal followed! We start our meal off with this fun and delicious Greek Orange and Olive Salad with a simple Lemon Dressing.

How to make Greek Orange and Olive Salad:

To make the dressing, whisk together the oil, lemon juice, and sugar in a small bowl. Drizzle over the orange and olive mixture and place in the refrigerator to chill and the flavors to mingle.

Remove the peel, pith, membranes, and seeds of the oranges, and slice into 1/4″ pieces. Place oranges and juices in a large bowl with the onion slices and olives. Set aside.

Place lettuce on a large platter or individual plates. Top with orange and olive mixture and fresh herbs.

I do not like olives, and I do not eat them. My experience with them has been the kind in the can that have already been pitted. The kind that you buy in bulk at the grocery store, may not have already been pitted. So make sure to pit your olives before serving! 🙂  Sorry Alex.

Ingredients

Dressing

  • 2 Tablespoons extra virgin olive oil
  • 1 Tablespoon fresh lemon juice
  • teaspoon granulated sugar omit for Whole30 & Paleo

Salad

  • 4 thick-skinned oranges
  • 1 small red onion sliced very thinly
  • 16 large black Greek olives pitted
  • 4 Cups mixed lettuce I used spring mix and baby spinach
  • fresh chopped herbs as garnish - Italian parsley, mint, dill

Instructions

  1. I love ALL the flavors in this salad Lisa! What a combo. Yes, I’m Greek and totally biased, but this is truly a winner! I know lamb is somewhat of an acquired taste, but I love it! John Stamos-haha, that’s cute!
