Cherry Chipotle Barbecue Chicken

I hope everyone’s summer is off to a good start. We have had nothing but rain, thunderstorms, hail, and more rain here in Iowa. So much for having a barbecue and taking some nice food photos, lol I finally caught a break mid week and managed to cook my Cherry Chipotle Barbecue Chicken…..
Now you will notice that my chicken did not cook evenly…..
I guess my burners are no longer working correctly. Believe it or not, all of the chicken was completely cooked! Cut into the thickest part of your chicken, or use a meat thermometer to check and make sure that it is thoroughly cooked. The chicken on the left is actually my favorite. That is how my dad has always cooked chicken on the grill, so to me that is normal! Yes, I like my marshmallows charred and black as well.
How to make Cherry Chipotle Barbecue Chicken:
Brush chicken with olive oil, season with salt and pepper.
Place on the grill and cook for 10 minutes.
Flip chicken over and cook for an additional 10 minutes.
Brush barbecue sauce on chicken and cook until caramelized.
Serve with Hawaiian Potato Salad, Cornbread and additional sauce.
This is the same sauce that I used on the Cherry Chipotle Barbecue Ribs a couple of weeks ago. I wanted to see how it would taste on other types of meat. It was just as good on the chicken as it was on the ribs!!! I made 3 pounds of ribs and 2 pounds of chicken, and still have half a bottle left of barbecue sauce which is why I did not include the recipe for the sauce.
Notes:
- I used 2 pounds of skin-on chicken thighs which equaled 4 thighs. Use any amount or combination that you choose.
- As you can see, my grill does not cook evenly. Cook until the internal temperature reaches 165 degrees.
So make some Cherry Chipotle Barbecue Sauce, grab some chicken and/or ribs, and have yourself an awesome weekend barbecue.

Ingredients
- 2 pounds chicken breasts, thighs, drumsticks - your choice
- 2 Tablespoons olive oil
- sea salt & fresh ground pepper
- 1 cup Cherry Chipotle Barbecue Sauce or sauce of your choice

I remember when you had it on the ribs and made sure you tasted it first thing after opening your new bottle. This looks fabulous on the chicken! I bet it is just amazing…can’t wait to try it out!
