I originally shared this recipe November 2016. Updated January 2023.

The temperatures are finally dropping here in Arizona, and that means I can finally turn on the oven again! And what should I make first? Pizza, I need pizza!!

I have actually had this Sausage and Kale Pizza in my head for a few months now, so it was time to to see if it was as good as I imagined…and it was!!

I used to pile my pizza sky high with toppings and cheese…lots of cheese! But after trying some Italian style pizzas with minimal amounts of toppings, I realized that they really weren’t necessary…and my waistline definitely didn’t need them either!

These measurements are more like guidelines though, use more or less depending on your family’s taste preferences. If you prefer extra sauce, then by all means add more sauce…or sausage…or even cheese. That’s the beauty of making your own pizza at home, you’re the boss!

How to make Sausage and Kale Pizza

Place baking stone (if using) into cold oven. Preheat oven to 500 degrees for one hour.

Roll out pizza dough into a circle on a well floured surface. Place dough circle on a parchment paper lined pizza peel or backside of a baking sheet.

Spread pizza sauce over the top of the pizza dough.

Sprinkle the mozzarella cheese, then the cooked sausage over the pizza sauce.

Sprinkle the chopped kale and Parmesan cheese over the top of the pizza.

Pizza dough topped with sauce, grated mozzarella, chopped kale, crumbled Italian sausage, and grated parmesan.

Slide pizza onto the hot baking stone and bake for 10 to 14 minutes, depending on your oven. My gas oven took 14, my electric oven took 10 minutes, so keep an eye on it.

Remove from oven, slice and garnish with additional grated Parmesan cheese.

This pizza is sooooo good, exactly what I was craving!

Recipe Notes

  • I used my Homemade Pizza Dough recipe that is made in a bread machine for this pizza…because I forgot to make the Italian Pizza Dough the night before.
  • The bread machine version is ready to use in about one and a half hours.
  • A full pizza dough recipe is enough to make 2 pizzas, just double the toppings and you will have lots of pizza…and leftovers too!
  • I used Mild Italian Sausage, but Spicy or Sweet would work as well.

As you have probably already guessed, I did not measure anything when I made this pizza. Making pizza is kind of second nature to me after this many years, so I just toss things on top without thinking. Have fun with it, get the kids involved and make an adventure out of it.

  1. This one would definitely be a hit in my house. The healthy eater would be happy about the kale, and the meat lover would be happy with the sausage. I love pizza’s versatility. Not sure I could rally to make my own dough, but I bet it would work with the dough I can buy at the grocery store, right?
